olives that are harvested without ever touching the soil, by milking, hand-pole beating, or using shaking machines or harvesting machines. Tree-harvested olives yield the highest quality oil since they do not get damaged during harvesting.

Example

Tree-harvested olives are brought to the olive mill few hours after they"ve been taken from the tree branches. These olives never touch the soil to avoid any possible contamination.
