which produces a distinctive flavour in the mouth typical of oils made from green or ripening olives, such as dark chocolate, caffeine or bitter almonds, and is considered a positive attribute of extra virgin olive oils.

Example

The extra virgin olive oil has to be bitter and spicy. If not, its not an extra virgin. Its intensity will depend mainly on the type of olive and the harvesting period, as well as other factors.
